Tofu Cucumber Salad

Ingredients for 4

  • 200 gm tofu
  • 2 sprigs cilantro
  • 1 stalk scallions
  • 2 cucumber
  • 1/4 cup roasted peanuts
  • 2 tomato

For Dressing

  • 2 tablespoon peanut butter
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon ginger
  • 1/2 teaspoon garlic
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon peppercorns

Method

  1. To prepare the salad, cut the tofu into half inch pieces carefully. Quarter and slice the cucumber in the same size of about half inch. Cut the tomatoes and chop the cilantro and the scallion greens roughly. Combine them together in a bowl and refrigerate.
  2. Now, prepare the spicy peanut dressing, and for that mix together peanut butter, soy sauce, rice vinegar, sesame oil, finely sliced ginger, sugar, finely chopped garlic and ground peppercorns in a medium bowl.
  3. Take out the salad bowl from the refrigerator and pour the prepared spicy peanut dressing on it. Toss well and your salad is ready. Enjoy! It is filling and highly nutritious!
