Ingredients

  • 1/4 cup canola oil
  • 1 kilo pork liempo, adobo cut
  • 1/2 cup soy sauce
  • 1 cup coconut vinegar
  • 1/4 cup brown sugar
  • 1 1/2 cups water, or as needed
  • 1 head garlic, separated
  • 1/2 teaspoon black peppercorns
  • 2 star anise
  • 1 284-gram can shiitake mushrooms, drained

Method

  1. In a large pot over medium heat, heat oil. Add pork in batches and sear all the sides. Return seared meat to the pot.
  2. Add soy sauce, vinegar, brown sugar, water, garlic, peppercorns, and star anise. Bring to a boil, covered, and then lower the heat to a simmer.
  3. Simmer until the pork is tender. Add the shiitake mushrooms. Simmer again until mushrooms are heated through and the sauce has reduced and thickened. Remove from the heat and serve.
