Dr. Rajan said that the specific method is to freeze the bread first, then defrost it and then bake it. He also said that this method can significantly reduce the glycemic index of the bread by almost two times. “It breaks down more slowly, causing blood sugar levels to rise more slowly,” he explains. “This all happens because more retrograded starch is formed. Retrograded starch is a type of resistant starch that is good for gut health. , because it acts more like fiber.”

The glycemic index (GI) describes how quickly carbohydrates affect blood sugar. Foods with a low glycemic index slowly release sugar into the bloodstream, keeping people feeling full longer. Conversely, regular consumption of high-glycemic index foods, such as sugar and white bread, increases the risk of diabetes and obesity.

Dr. Rajan also recommends other ways to increase the amount of sugar-stabilizing resistant starch in your food in the video, including eating green, unripe bananas, which contain 20 times more resistant starch than brown, overripe bananas. He also recommends eating the core of the apple (remove the seeds) while chewing it, as this part is full of microorganisms that help keep your gut healthy.
