HOW TO MAKE FORTUNE COOKIES
INGREDIENTS:
- 1/2 cup (60 gr) all-purpose flour
- 2 TBSP (18 gr) rice flour
- 1 teaspoons (3 gr) cornstarch
- 1/4 teaspoon salt
- 1/2 cup (100 gr) granulated sugar
- 2 large egg whites
- 3 TBSP canola oil
- 3 TBSP water
- 1/2 tsp vanilla
- 1/4 tsp almond extract (*optional)
INSTRUCTIONS:
- Preheat the oven 325 F (160 C).
- In a large mixing bowl, whisk together the flour, rice flour, cornstarch, sugar, and salt.
- In a separate mixing bowl, whisk the egg whites together until frothy.
- Add the oil, water, vanilla extract, almond extract, and egg whites into the bowl with the dry ingredients. Stir the ingredients together with a rubber spatula until it all comes together into a thin batter. The batter should run off the spatula into the bowl easily and should be thin like a crepe batter. If the batter seems too thick you can add a bit more water until it is very thin and runny.
- Grease a sheet pan, or alternatively you can use a silpat. Use a 1/2 TBSP measuring spoon and drop spoonfuls of batter onto the greased baking sheet. You can really only bake two at a time per person you have available to fold them as they cool really quickly and start to solidify.
- Bake at 325 F (160 C) for 8-11 minutes until golden brown.
- Remove from the oven and immediately use a spatula to release it from the pan. Add a fortune into the center of the cookie, fold in half pinch to seal. Fold the cookie in half on a mug and then place into a muffin tin to cool completely. This will help keep the shape of the cookie. If your hands are sensitive to heat, I recommend wearing gloves to do this as it is extremely important the the cookies are hot while you fold them.
- After completely cooled, store in an airtight container at room temperature for 5 days.
